Coconut Lime Seafood Soup

Steps
In a large pot, heat some oil over medium heat.
Add the minced garlic, sliced ginger, and lemongrass stalks. Sauté for 2 minutes until fragrant.
Add the red bell pepper, carrot, baby corn, and snow peas. Sauté for another 2 minutes.
Pour in the chicken or seafood broth and bring to a simmer.
Add the coconut milk and lime juice to the pot. Stir well to combine.
Season with salt, black pepper, and red chili flakes (if desired).
Add the shrimp, mussels, and fish fillets to the soup. Cook for about 5 minutes or until the seafood is cooked through.
Remove the lemongrass stalks from the soup.
Serve the soup hot, garnished with fresh cilantro.
