Coconut Lime Seafood Soup

  • mussels

  • fish fillets

  • coconut milk

  • chicken or seafood broth

  • lime juice

    2 tablespoons

  • lemongrass stalks

    1-inch piece, sliced

  • garlic cloves

  • red bell pepper

    1, thinly sliced

  • carrot

    1, julienned

  • baby corn

    1 cup

  • snow peas

    1 cup

  • fresh cilantro

    1/4 cup, chopped

    to taste

  • black pepper

    to taste

  • red chili flakes

Steps


  • In a large pot, heat some oil over medium heat.

  • Add the minced garlic, sliced ginger, and lemongrass stalks. Sauté for 2 minutes until fragrant.

  • Add the red bell pepper, carrot, baby corn, and snow peas. Sauté for another 2 minutes.

  • Pour in the chicken or seafood broth and bring to a simmer.

  • Add the coconut milk and lime juice to the pot. Stir well to combine.

  • Season with salt, black pepper, and red chili flakes (if desired).

  • Add the shrimp, mussels, and fish fillets to the soup. Cook for about 5 minutes or until the seafood is cooked through.

  • Remove the lemongrass stalks from the soup.

  • Serve the soup hot, garnished with fresh cilantro.
